Caramelized Plantains

Plantains turn up everywhere in West African cooking.  They’re nibbled on as street snacks, pounded into mashes and Foofoos, added to soups and stews, and served as dessert. 

 Peel 4 plantains. Cut lengthwise and then into thin 2 inch strips. Heat 3 tablespoons of oil in a pan on top of the stove using  medium heat. Add the plantain slices and cook for 8 to 10 minutes until they are lightly browned and slightly caramelized.  This will take about 8 to 10 minutes.  Make sure that they do not burn in the pan. Sprinkle 3 tablespoons of sugar over the plantains and heat for a little bit longer until the sugar begins to caramelize.
