Plantains
Plantains turn up
everywhere in West African cooking. They’re
nibbled on as street snacks, pounded into mashes and Foofoos, added to soups and
stews, and served as dessert.
Peel
4 plantains. Cut lengthwise and then into thin 2 inch strips.
Heat 3 tablespoons of oil in a pan on top of the stove using
medium heat. Add the plantain slices and cook for 8 to 10 minutes
until they are lightly browned and slightly caramelized. This will take about 8 to 10 minutes. Make sure that they do not burn in the pan. Sprinkle 3
tablespoons of sugar over the plantains and heat for a little bit longer until
the sugar begins to caramelize.
